A bit about me… While I never had a sweet tooth and would not try to bake a marvellous 7-colour cake, I have always enjoyed the smell and warmth of fresh bread coming out of the oven and the slippery fresh spaghetti. I strongly believe you can only cook something well if you enjoy eating it yourself.
Making good bread requires patience. Knead and knead, and then walk away to let the dough rest. The first time I made bread at home, my children were fascinated by the dough rising. It was magical, it was chemistry, it was exciting! I've learned to enjoy the waiting rather than rush, because every hour the dough spends proofing makes it lighter and more flavoursome. Then, nothing beats the moment it comes out of the oven, when the whole house fills with the warm, golden smell of fresh bread.
And the pasta and gnocchi? It is a story 30 years in the making. It started when my best friend’s Nonna made pasta in front of us, and we tried to make it ourselves, only to produce inedible bricks… Yup! And then there was a recent trip to Italy, an old-fashioned Mamma on an organic farm who taught me to make pasta. Finally…
Producing my own bread and pasta has also taught me that eating healthily doesn't have to mean cutting out carbs completely. It can simply mean choosing fresher, simpler ones made with real ingredients and a bit of time.
The catering dishes are all traditional family meals, from my mother, my mother-in-law, my husband's and mine of course. They all require time and patience.
